Ivan Mervic, locally nicknamed ‘Jnk’ (pronounced Y-uh-nk), began planting terraced vineyards in the amphitheatre-like valley of Sempas, situated perfectly between sea and mountains, in the 1890s. Steep-slope minerality, long skin maceration (5 to 14 days for the whites, 40 days for the reds) and extended barrel ageing (1 to 2 years) are recurring themes in the family’s wines, who are now in their 4th generation of winemaking. The wines are aged in bottle at the winery until Boleslav and Kristina deem them ready for release.
