Jérôme’s story is one of determination. Studying initially as a carpenter, he was so inspired by the work and stories of his Grandfather Charles a viticultural scientist, that at the age of 23 he took over the family plot of 0.2h and started to produce his own wines. He has grown with the help of many local Friends, including his now business partner Yann Bury, who offered him vineyards to manage and barrels for his cellar. All vineyards if they were not already (he has some of Binner's old parcels) were converted to Biodynamics. This caused a great deal of stress on some of the vines but with time and with the help of Sirius

his horse, he is reaping the benefits.

At harvest, the fruit is pressed off over a 9 hour period. Strengthening the wine with hyper

oxygenation and adding a little more complexity from a tiny amount of skin contact. From the press straight into barrel, where they are left on the gross and fine lees until bottling.

The wines are not racked.
