The sparkling wine jewel of Italy, Franciacorta is the home is Ca del Vent. Antonio and Fabio have 7 hectares of mixed varietals ranging from the Chardonnay and Pinot Noir to the Nebbiolo and Sangiovese. Much of the vineyard is biodynamically farmed excepting the single acre used for experimentation.
All wines except for the Cellatica Rosso are fermented in oak barriques, and similarly the maturation that follows is in wood. Soothed by the sounds of classical music and Tibetan bells to reconnect vines to mother nature, this vineyard is something special, as is the wine it produces.
Blanc de Blanc pas opéré
This is a precision blend of seven crus of Chardonnay, all vinified separately, fermented in oak and then matured for 8 months in wood. Once bottled the wine is left on the lees for just under 3 years. Remarkable minerality is matched by a touch of creaminess, held by the weight of the grape and the oak.
With only 600 bottles of the Pinot Noir produced, this is continuous experiment for the winery and as such carries a particular charm. Fermented in wood allows the brightness to shine through offering more developed summer fruit and mineral layers.
Blanc de Blanc Sospiri
Just over the road from the sparkling wine vineyards sit two chardonnay crus. Only bottled in the best years these grapes spend 8 months in old wooden barrels allowing for natural malolactic fermentation. Its innate richness is lifted with incredible flavours of tropical fruit.
The only Ca del Vent wine to be matured in stainless steel this is a local blend of indigenous grapes with each variety being separately vinified before blended. Rich and surprisingly rounded with fruit dominating the nose, the mouth is complex, spiced and full.
A beautiful blend of Merlot, Cabernet Sauvignon and Syrah from a single vineyard site rich in limestone. Each variety is vinified separately with natural fermentation & then transferred to barrique for two years. No sulphur is added at any point in the process.
